The ancient people of Miao ethnic group cherish such a custom as “partaking the heart of chicken” during festivals when the host gives a hearty hospitality to the guests.
Upon the guests’ arrival, the patriarch extends a chicken heart to the guest, which means he has given his heart, and the guest is expected to share it with the elder people around the table. It implies being selfless, doing things fairly, and being a reliable one. In light of the heroic temperament of the Miao people as “glutton of meat and wine” and “drinker of scarlet wine”, they combine wine and chicken to create this bloody wine-flavored chicken. This cuisine is a fusion of chicken and wine. It uniquely and ingeniously inherits the ancestral food culture and humanistic culture, which enlighten us to learn to respect others, ready to give, keep one heart and mind, and be selfless. The strong and mellow aroma of white wine, orange leaves and the deliciousness of local chicken are perfect match, spicy and crispy, with ever-lasting aftertastes. Thus, it is a traditional delicacy in Miao Township.
