With a history dating back the Ming Dynasty (1368-1644), Yuanling crunchy candy is famous in China. The square-shaped candies are sweet, fragrant and crunchy, and are melt in the mouth easily. Yuanling crunchy candies feature white toasted sesame seeds, which will be crushed and used to make the filling with other ingredients, including maltose, peanut oil and flour. Rich in nutrients, they can moisten the lungs and are helpful for digestion. They are popular among visiting overseas Chinese, who always buy some crunchy candies as gifts for their families and friends back home.
Yuanling crunchy candy features carefully selected ingredients and a unique production process, with its exquisite quality primarily stemming from the way the filling is crafted. The filling is made from locally produced sesame seeds, supplemented with malt sugar, peanut oil, flour, and other ingredients. Before making the filling, the sesame seeds are soaked in water, washed clean, and hulled. They are then dry-roasted in a pan until cooked. The roasted sesame seeds should be silver-white, expanded, and easily ground into powder between fingers, after which they are blended with the other ingredients to form the filling.
The outer layer of Yuanling crunchy candy is also distinctive, made from malt sugar that is repeatedly pulled and twisted by hand until it becomes white. This process achieves a texture that balances toughness and elasticity, resulting in an appearance like white frost. The thin layer created from this outer coating is as delicate as paper.
