Glutinous rice cake with mashed bamboo shoots is a seasonal delicacy of Zhongdu Town of Xupu County. It is made of glutinous rice powder mixed with pounded bamboo shoots. Shredded bamboo shoots will be ground with a pestle and mortar and then be put into a cloth bag to get all the juice out.

The pounded bamboo shoots are poured into a basin, added with chili peppers and glutinous rice flour, in which the ratio of mashed bamboo shoots to glutinous rice flour is one to one. The mixed paste will be made into palm-sized rice-bamboo shoot balls. Once the cakes are ready, they can be fried or roasted, which makes the skin crisp.
