Xinhuang preserved meat is a traditional delicacy, known for its rich flavor and unique preparation methods. It is made from fresh pork that is smoked to perfection, making it a delightful dish for entertaining guests in Dong villages. The Dong people have a tradition of raising pigs, and every year, just before the Spring Festival, families slaughter a pig for the celebration. After setting aside a small portion of fresh meat for the New Year festivities, the remaining meat is cut into pieces, salted, and hung on the heated platform for further drying. Once the Spring Festival is over, the meat is taken down and stored in a well-ventilated area or in a storage room, allowing it to be preserved for over six months. This method not only enhances the flavor of the meat but also ensures that it can be enjoyed throughout the year, reflecting the resourcefulness and culinary traditions of the Dong people.
