Wash and eviscerate the fish and spread a layer of salt on it. In addition, mix appropriate amount of glutinous rice with minced chili, minced ginger, mashed garlic, cooking wine and other seasonings which are prepared in advance; then place the mixtures one by one in the fish ribs and belly which have been salted for three to five days; and then put the fish ribs and belly with mixtures into a jar or wooden barrel layer by layer and press them to insulate the pickled fish from the air. It can be eaten after being pickled for a month. And the salted fish is delicious.
