    Hongjiang pomelo candy is a distinctive traditional delicacy from Hongjiang District, Huaihua City. It is made from native wild mountain pomelos, showcasing the intangible cultural heritage craftsmanship and embodying both medicinal benefits and rich cultural significance.

    The candy is made from old mountain pomelos grown in Guifangyuan Township, Hongjiang District. These pomelos are prized for their thick peels, which are rich in natural pectin and volatile oils. While the fruit pulp is discarded, the pomelo peel is carefully processed to retain its unique fresh aroma and medicinal properties. The thick peel variety is ideal for making preserved treats and no food additives are used in production.

    The making of Hongjiang pomelo candy involves several steps:

    1. Removing the pulp;

    2. Soaking the rind to remove bitterness: pomelo peels are soaked in mountain spring water or well water for several hours to eliminate bitterness;

    3. Steaming and rinsing: the peels undergo multiple rounds of steaming and rinsing to further refine the texture and taste;

    4. Simmering with sweeteners: the peels are slowly simmered with honey and maltose syrup. Traditional recipes may include herbal ingredients such as honeysuckle and monk fruit for enhanced health effects;

    5. Drying and setting: after cooling, the peels are marinated with honey, then naturally air-dried or low-temperature baked until translucent and glossy. Some longstanding brands, like “Yishunfu”, still use coal-fired simmering methods that emphasize “family heritage”, carefully controlling heat and timing.

    Rich in vitamin C, naringin, and dietary fiber, Hongjiang pomelo candy is valued in traditional Chinese medicine for moistening the lungs, relieving coughs, resolving phlegm, regulating qi, and aiding digestion. It is especially recommended in autumn and winter or for those with respiratory discomfort. In traditional Chinese medicine, it is considered to have a warm nature and can be used as an adjunctive therapy for conditions such as chronic bronchitis and indigestion.

    As a leisure snack, the candy can be enjoyed directly or paired with tea. It is also a popular specialty souvenir from teahouses and guesthouses in the Hongjiang Ancient Commercial Town. Its sweet but not cloying flavor and natural fresh aroma make it a delicious cultural experience for visitors.
