Amber cured pork is created by Zou Xudong, president of Huaihua Catering Industry Association and chairman of Huaihua Mingtang Catering Management Co., Ltd. The secret to this aromatic dish is the selection of streaky pork as raw material and the savory taste after being smoked with Chinese walnut shells and tea trees. Only eight pieces of streaky pork are taken from each pig. Carefully pickled and dried, the streaky pork is smoked with wild walnut shell and tea tree. After natural fermentation and removal of the smell of smoke, the final product is bright and transparent with a mellow and chewy taste.
