Amber Bacon was created by Zou Xudong, chairman of Huaihua Catering Industry Association and Huaihua Mingtang Catering Management Co., Ltd. In order to let the famous Western Hunan bacon enter the public dining table, he goes into the countryside and selects the best native pigs. Only eight pieces of streaky pork are taken from each pig. Carefully pickled and dried, the streaky pork is smoked with wild walnut shell and tea tree. After natural fermentation and removal the smell of smoke, the final product is bright and transparent with a mellow and chewy taste.
